A hearty hot lunch box for office of this homemade chicken noodle soup provides an abundance of protein, vitamins and minerals. It’s a healthy alternative to store bought soup which tends to be loaded with sodium. The whole chicken (and vegetables) are slow-cooked to create flavorful broth and the homemade noodles don’t overcook or get soggy in the soup. Use milk or half-and-half to make the soup creamier if you’d like. Homemade wide egg noodles are best but if you can’t find them or don’t have time, a package of the plain kind will do.
